And the plants just keep on growing! Another week of major garden harvests! And another week of good growth for the fall planted crops. On Saturday, all the beans, beets, carrots, kohlarbi, lettuce, radishes, and squash are sprouted and growing strong. Just nine weeks until the end of the season, and the days are growing shorter, but there’s still plenty of time for harvesting even more Jersey Fresh goodies from the garden!

Yum! Good things from the garden. Grilled pork tenderloin, with cucumbers, wilted chard sauteed with onions, peppers and cherry tomatoes. Delicious dinner on Friday, August 28th. Oh. So. Good.
So with a whole lot of tomatoes, and a big bunch of peppers & onions, and an afternoon of hard work…nearly a gallon of Jersey Fresh salsa! This is where all the work of the spring and summer is paying off. It’s going to make for mighty tasty eats this winter!
This week’s harvest of tomatoes…
…peeled, cored and crushed…
…add garden fresh peppers (green & red bell, jalapeno, habanero, cayenne, and hungarian) and onions…
…simmer for a bit…
…and what do we have? Almost a gallon of Jersey Fresh salsa! Yum.
